Easy Peasy Homemade Granola
Clients often ask me to recommend healthy breakfast options and this is one of my breakfast staples.
I recently started to make granola at home as a way to control the amount of sugar and salt etc going into the recipe and to ensure it was packed with lots of nutrients instead. This is a perfect breakfast addition because it tastes great added to fruits, yoghurt or mixed into a smoothie or acai bowl.
Preheat over to 180˚/350˚F
200g plain oats
100g almonds roughly chopped
50g walnuts roughly chopped (hazelnuts and cashew nuts also work well)
100g pumpkin seeds roughly chopped
50g sunflower seeds
Half a cup of chia seeds
Half a cup of flaxseed
6 tbsp coconut oil (melted)
4 tbsp honey (optional)
Mix together in a bowl.
Pour into a large ovenproof dish and bake for 30 mins. Stir occasionally. Let it get a little golden brown. Tastes delicious and will make the kitchen smell amazing once the almonds and walnuts start to roast a little.
